The Etudes series was created as a result of the cidermakers' yearn to experiment with varying maturation styles and also with single-varietal ciders crafted from just one variety of apple.
Etude No 1 - bone-dry carbonated Northern Spy matured in stainless steel tanks; austere & citrusy
Etude No 2 - bone-dry, naturally-sparkling Northern Spy fermented and matured for a year in French oak puncheons, citrusy with bready croissant-like overtones
Etude No 3 - bone-dry, naturally-sparkling, pet-nat Harrison with notes of tangerine
