This artisanal cider is made from a blend of dozens of different cider varieties sustainably grown by Pleasant Valley Cider Apples in the Willamette Valley along the banks of the South Fork of the Santiam River. The melange includes many various tannic English and French bittersweet and bittersharp varieties along with aromatic American heirlooms, red fleshed, and crab apples. The apples were pressed during the harvest season and barrel fermented with native yeasts and bottle conditioned.
