Refreshingly tart, full-bodied, and dry, ITHACA SHARP #4 celebrates our hometown and the extraordinary apples that grow in central New York. We picked much of the fruit from rescued 150-year-old Newtown Pippins and other trees we hold dear. These craggy antiques are remnants of the original orchard that once graced our 1820s farm—where today we craft sparkling cider using traditional methods. Ithaca Sharp is spontaneously fermented and aged on the lees for months. Wild yeasts impart complexity to the blend, which also includes GoldRush, Northwest Greening, and Rhode Island Greening apples. Effervescence develops naturally in the bottle. Enjoy cool.
