Call us traditionalists. At New York Cider Company, we don’t do sweet, and we don’t like gimmicks. We press ripe apples and wait till spring. The way it’s been done for millennia. That said, we believe dogma stifles creativity. THE HOPPED ONE #3 is a happy union of these opposing philosophies. We start with a blend (this one includes North American heirlooms Golden Russet, Newtown Pippin, Northern Spy, Spigold, and McIntosh), add wild foraged fruit, and—radical for us—pair it with another ingredient: aromatic New York State Willamette hops. They smell . . . no way around it . . . like weed. And they impart complexity, resulting in a fruity, herbal, and refreshing cider. Enjoy cool.
