That said, we believe dogma stifles creativity. THE HOPPED ONE #3 is a happy union of these opposing philosophies. We start with a blend (this one includes North American heirlooms Golden Russet, Newtown Pippin, Northern Spy, Spigold, and McIntosh), add wild foraged fruit, and—radical for us—pair it with another ingredient: aromatic New York State Willamette hops. They smell . . . no way around it . . . like weed. And they impart complexity, resulting in a fruity, herbal, and refreshing cider. Enjoy cool.
