Atlantica is inspired by hundreds of years of Asturian cider-making tradition. These traditional sidras have always had a unique place in our hearts, so we set out to make a cider with a similar profile with fruit from Maine and New Hampshire.
Featuring Northern Spy, Baldwin, Golden Russet, Calville Blanc d’Hiver, Chisel Jersey, and Wickson apples, the cider was spontaneously fermented and aged on lees in a 25HL (or 650 gallon) ex-Amarone oak foeder that we imported from Italy. The combination of these apples, the vessel and time lends a flavor experience reminiscent of lemon zest, green apples, white flowers, and ocean spray.
Atlantica is an expression of our space, our developing identity, and the influence of those before us. It's a guiding light for us, and an ode to the deep roots of Asturian sidra.
