Cortland is a wonderful and finicky apple. At it's best it is vinous and rich, reminiscent of a New Zealand Sauvignoon Blanc. This batch was aged in rye barrels that had also been used to age mead from The Mead Works @ Wilderbee Farm. With it's full body we decided it didn't need to be carbonated. We hope you enjoy it as much as we have!
