This is our first foray into the world of Pet Nat cider (naturally Petillant). This style of cider making is familiar to us from our years of producing bottle conditioned ciders but this takes it to another level. Instead of fully conditioned and aged cider being treated to a small dose of sugar to feed the yeast and build carbonation this approach stops the natural fermentation before completion by bottling, preserving the fruit sugar.. So while it seems like the very simplest way to make cider it actually comes with it's own set of challenges. We think the wonderful fruit aroma and delicious freshness of this batch makes it worthwhile.
Alpenfire is a certified organic, estate hard cidery. Here on the Olympic Peninsula we have planted just shy of 1,000 English, French and Heirloom apple trees.
Most of these apples have been used for generations in Europe and Colonial America to produce hard cider with tannic and bittersweet characteristics.
The complexity of the juice from these apples is what makes Alpenfire cider such an enjoyable and unique drink.
