Winemaking:
We destemmed the Chenin Blanc and Viognier, into smaller macrobin fermenters where it fermented spontaneously on the skins for 13 days before we pressed off the juice into old French Oak barrels where it aged for 13 months before we bottled without fining for filtering. A truly unique white wine made like a red wine.
Tasting Notes:
Features aromas and flavors of honeycomb, honeydew & fragrant melon, cantaloupe, BBQ'd apricot, medium plus weight, integrated tannin and a bright, zippy finish. Drink on its own or pair with chicken, pork, charcuterie, and creamy/fatty cheeses.
