Varietal: 100% Viognier
The Viognier was harvested at 23 brix, hand-sorted and moved whole
cluster into press. The pressed juice was moved to stainless steel for 23 hour
cold settling before being moved into neutral French Oak barrels, where it
was fermented and aged (sur Lie) for 10 months.
The Viognier was then blended (18%) with our finished brut cider (82%) into
three natural french oak barrels and aged for and additional five months
before being bottled unfined and unfiltered.
