Kingston Black apples hand forged from the Sacramento-San Joaquin Delta, slow fermented, bottle conditioned, racked, riddled, and disgorged in the traditional method.
Kingston Black is a renowned bitter sharp English cider varietal that was discovered in Kingston, Somerset, England in the mid to late 19th century. Due to its near perfect balance of sugar, acid and tannins, Kingston Black is often sought after to produce a stand-alone, single varietal cider. The fruit is aromatic with a sweet-acid flavor and a noticeable astringent aftertaste. When fermented, Kingston Black produces a distinct, full bodied cider with rich flavors of Citrus, apple and butterscotch.
Tasting Note: Flavors & aromas are pronounced showing an invigorating spice blend of green cardamom, anise, licorice root, Peruvian black mint and pink peppercorns; followed by a fresh greenness of tarragon, mugwort, and guava like fruitiness. The finish has a fruity brininess like that of caper berries that enhance the aforementioned. Acidity is a zesty medium, with round textures and color is true gold with a unique lime-green hue.
