Methode Champenoise, 750mL, $32/bottle
7.5% Alc. by Vol.
McIntosh apples hand harvested from the California Central Coast, slow fermented, bottle conditioned, racked, riddled, and disgorged in the traditional method.
The McIntosh apple is named after John McIntosh who discovered the chance seedling while clearing out an overgrown plot of land on his farm in Upper Canada in 1811. Since the crabapple was the only native apple in North America before European settlement, experts believe the seedlings may have developed from discarded European apples. McIntosh apples are firm, tender, juicy, characteristically tart, spicy, and aromatic. The McIntosh is considered by many to be the best flavored apple and has made such an impression on the region of discovery and cultivation, that it was decreed Canada’s national apple and was imprinted onto the 1996 Canadian silver dollar.
Tasting Note: Flavors & aromas are very nostalgic. Shows a very intensely distinct fresh apple core going to caramel-apples, and fresh baked apple pie. This is rounded out by citrusy freshness of lemon balm, makrut lime leaves and a savory-sweet spiciness of creamy curry vadouvan. Acidity is bright & crisp, expressing lean juicy textures and vigorous tiny bubbles cleansing the palate with every sip. The pale lemon yellow color adds to its thirst quenching nature.
