This semi-dry cyzer, is made by fermenting honey with apple juice. This cyzer which we named Mellifera (apis mellifera is the scientific name of the European honey bee) is made with local honey (Thorny Bottom Bees) Not only do we ferment with honey, but at bottling we actually back sweeten this cyzer with honey to achieve a 2% residual sugar content. The honey softens the acid of the Highland County Grown apples to make a smooth refreshing slightly sweet drink that has wide appeal, among cider drinkeers as well as wine drinkers.
Notes
Honey comes through on the nose, as well as the palate. Notes of elderflower, pear, and some lingering acidity of the apples is bright on the mid palate. The slight wsweetness of this cider would suggest pairing with spicy curry dishes, or also with crispy skin poultry.
