This is a group of 100% Highland grown, produced, and bottled products- cider, maple syrup and honey. This is Highland terroir at its finest. First, we have our Wild Meadow cider, an off-dry cider, with a fruity character, minerality, and some underlying tartness and tannins from the wild crabapples that find its way into this blend. It is made from 100% Highland grown wild foraged apples. Second, we have Elevation, a semi sweet cider made from apples harvested all over Highland County, particularly old Highland farms. This cider, has been fermented with the native yeast that came in on the apples (wild or spontaneous fermentation) It has soft floral notes, also, a touch of melon and stone fruit comes through, which is typical of our wild ferments. It's a great food cider since it pairs well with most anything from spicy dishes, to seafood, and of course fatty dishes and cheese. Third we have a 3.4 ounce decorative bottle of some of the best maple syrup made in our area, this 100% pure maple syrup was made by Doug & Terri Puffenbarger from sugar trees within a few miles of their sugar camp in the Blue Grass Valley. And last, but not least, we have what I believe is the best, smoothest honey made in the Alleghenies, a 1/2 pound jar of Thorny Bottom Bees honey, very fragrant, with floral and spicy notes.
