Dame Melba is a sparkling peach cider, a pétillant naturel blend of wild and cultivated apples and coastal yellow peaches. Named for the mellifluous soprano Nellie Melba, this cuvée showcases the harmony of apple and peach. The apples are wild and cultivated (varieties include Liberty, Frequin Rouge, Old Pearmain, Cox’s Orange Pippin, Roxbury Russet, Orlean, McIntosh, Cortland, and
Empire), and the peaches come from the city owned Brooksby Farm, in Peabody, MA. The peaches were harvested, pitted, and frozen in August and added into cider in the spring of 2022. 11 days cofermented and then bottled with fresh cider to create a plush bubble under cap.
This cuvée is my second apple and stone fruit cofermentation, inspired by Mathiason’s beautiful sparkling peach and Chardonnay wine. Dame Melba is a softer sibling of Semiprecious with a fleshy, fruit-driven front palette that evolves into citrusy and tropical notes with a mineral and slightly herbaceous finish. A lovely beverage for relishing the seasonal shifts.
